What are some really good vegetarian/ vegan holiday recipes?

Every year, my family contributes to a holiday potluck at christmas and thanksgiving, and even at easter. i would like to make some really good food vegetarian/ vegan food for my family. Any suggestions?

    i think they would like the celebration roast with gravy.
    the apple potato dumplings that come with the tofurkey feast.
    sorry its the one day of the year that i don’t want to cook anything from scratch

    remember many xmas puds are vegan!

    serve with soy custard or soy/rice ice cream

    also put mince meat (vegan obv) in filo pastries

    put soy creamy mushrooms in voulovens and puff pastry

    also fill puff pastry with roast veggies-honey roast are especially nice

    frozen bananas blended make nice icecream

    soy yogurt with maple syrup or conserve and vegan almondi biscuits or oaty granola

    chesnut or nut filled pastries, spice with cloves/cinnamon or herbs

    mushroom stuffed pastries

    portabella mushrooms stuffed with yum stuff!

    use egg replacers to make brownies and cookies

    soy/sunflower margarine cookies, gingerbread men or flapjacks

    fruit juice warm and spiced

    nutmeg and cinnamon spiced warm soya milk

    flavor things with spices, herbs, sugar

    make things creamy with soy mayo, cream, yogurt, milk, custard, margarine

    almond milk, oat milk, oats

    its limitless! don’t restrict

    Deserts are always easy. I like Ratatouille too, all veggie, hmmm…three bean salad, onion soup with rolls, green bean cassarole…

    If your family is pretty traditional, I’d suggest Tofurkey and vegan pumpkin pie for T-Day and a Celebration Field Roast for Christmas. There are a TON of great side dishes you can make, too. Sweet potato casserole is a favorite of mine, and you can get vegan marshmallows to top it at a lot of health food stores. Try doing a Google or Yahoo search for vegan holiday food, and you should come up with some really great stuff.

    Here’s the pumpkin pie recipe I use, just as an example. For the crust, I usually get the ready-made Keebler shortbread crust, because I fail at pastry. :)

    Preheat oven to 350 degrees F.

    Have ready, one 9 unbaked pastry crust

    Blend in blender:
    2 c. solid-pack canned pumpkin (if you use home-cooked pumpkin, drain it for
    several hours hanging in a cloth bag, so it’s thick like canned pumpkin)
    1 c. non-dairy milk (preferably a rich soy milk)
    3/4 c. brown sugar or Sucanat
    1/4 c. cornstarch
    1 T. molasses or blackstrap molasses
    1 tsp. ground cinnamon
    1 tsp. vanilla
    1/2 tsp. EACH ground ginger, nutmeg and salt
    1/4 tsp. ground allspice or cloves

    Pour the filling into the pastry and bake 60 minutes, covering the edges with foil if they begin to brown too quickly. Cool on a rack, then refrigerate overnight before serving.
