I am a vegetarian and am looking for food ideas. What are good vegetarian foods?

Paul M.’s first wife, Linda, wrote a vegetarian cook book. Try to find it for some good ideas. I use a lot of portabella mushrooms in lieu of meat in dishes and beans and legumes will give you good sources of protein as will nuts. Try a vegetable lasagna made with eggplant or a vegetable soup. Curry dishes are always nice for a change of pace if you like a bit of spice and you can make some wonderful vegetable chilis.

one of my favorite things to make is red beans rice (even my meat-eating husband loves it!). it’s really cheap to make, fills you up, and you can add whatever spices you like. All you need is a can of kidney beans, some rice, and some cajun seasoning and you’re good.

Panko bread crumbs are Asian bread crumbs that are very healthy and allow for you to make a fried texture and taste in the oven. The recipe below can be used for ANY vegetables. I’ll make radishes and onions, green beans sweet potatoes or anything. Note: this is not my recipe, and I have provided the link to cooks.com because i don’t want to be accused of plagiarism. Also I have found that the corn starch can be substituted with flour, and i never use the milk (it might make it better, but mine always turn out great).
CRUNCHY ONION RINGS
Oven frying gives a crisp coating without all the fat. This technique will work with any vegetable. 2 lg. onions 2 tbsp. all-purpose flour 2 egg whites 2 tbsp. nonfat milk 1 tbsp. cornstarch 3/4 c. panko (Japanese bread crumbs) or plain bread crumbs 1 tsp. salt free seasoning blend
Preheat oven to 400 degrees. Brush oil on 2 nonstick pans and set aside. Slice onions and separate rings; set aside. Place flour in a paper bag.
In a shallow bowl, combine egg whites, milk and cornstarch. In another paper bag, combine panko and seasoning. Shake rings in flour; shake off excess. Dip rings in egg mixture and then shake in bread crumbs. Place rings on pans and bake for 10-15 minutes; turn and bake until onion rings are crisp.

Take a bag of frozen califlower and put in a skillet with a little oil and cook for about 5 minutes then add 1 can of vegetable stock and 1 onion chopped up and cook about 5 minutes then add two cans of stewed tomatos and cook about 10 minutes till heated through and serve over pasta you can also do this with broccoli and you can also use fresh veggies

Stir Fry… Use a little oil/Butter
Fry Cabbage shredded carrots onions add the brocoli last and just lightly toss it a few times.. serve over Rice

For eating on the run, ask for the veggie burger (boca) combo at Burger King. I add cheese because I am not vegan, and it is delicious. Don’t say BOCA they won’t know what you are talking about lol!

Well I am Italian and I can tell you that made it easy for me to be a vegetarian. There are so many dishes, like pasta that you can make. Here is a recipe that’s has a sauce you do not even have to cook! Enjoy.
Pasta with No-Cook Tomato and Bocconcini (mozzarella balls) Sauce
Pasta with a no-cook sauce of sweet cherry tomatoes, fresh mozzarella, and a handful of your favorite chopped herbs gives you dinner in seconds.
Ingredients
2 pints cherry tomatoes, each cut in half
1/2 cup loosely packed fresh flat-leaf parsley leaves, chopped
1/2 cup loosely packed fresh basil leaves, thinly sliced
1/4 cup olive oil
1 teaspoon salt
1/4 teaspoon coarsely ground pepper
1 garlic clove, crushed with press
1 package (16 ounces) penne or corkscrew pasta
12 ounces small mozzarella balls (bocconcini), each cut in half
Directions
1. In large serving bowl, stir cherry tomatoes, parsley, basil, oil, salt, pepper, and garlic. Let stand at room temperature at least 1 hour or up to 4 hours to blend flavors.
2. Heat large covered sauce pot of salted water to boiling over high heat. Add pasta and cook as label directs. Drain well.
3. Add pasta to tomato mixture; toss with bocconcini.

I am from India, not a vegetarian but we eat meats once a week because there is such a large variety of vegetarian dishes and they are so easy to cook. One of my favs for just the family(one pot meal) and for a large group is Pav Bhaji…it is a very nutrious dish with a lot of veges and the best part is that it is quick and is partly made in the microwave….her eis the recipe..
Ingredients:
Potatoes – 3 cups, diced small
Cauliflower – 2 cups, finely chopped
Frozen Green Peas – 1 cup
Carrots – ½ cup, diced small
Salt – 1 tsp (to taste)
Haldi(Turmeric) – ¼ tsp
Water – 1/2 cups
Oil – 1 Tbsp
Butter – 1 Tbsp
Jeera (Cumin Seeds) – ½ tsp
Hing (Asofoetida) – pinch
Red Chili Powder – ¼ tsp (to taste)
Onion – 1 medium, finely chopped
Garlic – 2 tsp, minced
Ginger – 2 tsp, minced
Tomato – 1 medium, chopped
Tomato Sauce – ½ cup (1/2 of 8 oz. can)
Pav Bhaji Masala – 2 tsp (to taste) -buy from Indian store
Dhania Powder – 1 tsp
Lemon Juice – ½ tsp (to taste)
Cilantro – 5 sprigs, chopped (for garnishing)
Method:
In a microwaveble dish, add Potatoes, Cauliflower, Green Peas, Carrots, Salt, Haldi and Water – Mix well.
Cook till the veges are tender.
Heat Oil and Butter in a non-stick pan.
Add Jeera and allow it to sputter.
Add Hing and Red Chili Powder.
Add Onions, Garlic and Ginger – stir well.
Cook until Oil starts to separate.
Add Tomatoes and Tomato Sauce and mix well.
Cook until Oil starts to separate again.
Add Pav Bhaji Masala and Dhania Powder – mix well and cook for 1 minute.
Add Vegetables and lightly mash.
Add Lemon Juice and adjust Salt/Chili Powder/Pav Bhaji Masala.
Cook for 5 minutes.
Garnish with Cilantro.
Tips:
Serve with toasted hamburger buns or potato rolls.
Sprinkle some finely chopped onions on the bhaji when serving.
Add a little pat of butter to the bhaji when serving….mmmm! (…only if your cholesterol isn’t through the roof!)

Go search for vegan recipes on the Internets. I’m sure there are tons. Also, go find an Indian (the kind from India) cook-book. Many indians are veggies.

aproduct called Quorn you can get and make either the roast or the patties… they are so delicious and just warm or microwave… with a little garden salad or amys soup on the side.
Morning star farms crumbles make a nice veggie chili.. with canned tomatos, jalapeno, chili powder,onion and 1-2 cans of pinto beans add salt and pepper to taste…
Vegetarian hot dogs…chili dog with oven baked french fries
the new fake steak strips from mornign star farms or chicken strips make a nice easy stir fry
also you can use the fake chicken and buy a pie crust and a 2 cans of vegetable soup and make a chicken pot pie… its really easy and good
