Chitlins. The cleaned intestine of a pig, prepared as food. My Afro Americans friends have tried and tried to help me like them—to no avail’ I’ve eaten B-BQued monkey, alligator and God knows what else, but have yet to be able to finish a chitlin. As they’re cooking they smell awful.
