How do authentic Mexican Restaurants season ground beef?

I love to eat authentic Mexican food and would like to make restaurant quality dishes. How do Mexican restaurants season the ground beef that they use for tacos, etc? Also, I’d like a good queso blanco recipe. Any help?

    1 large onion, chopped
    1 large red bell pepper, chopped
    4 large tomatoes, chopped
    5 cloves garlic, minced
    2 tablespoons ground cumin
    1 teaspoon dried, crushed Mexican oregano
    1 tablespoon garlic powder
    1 teaspoon salt
    1/2 teaspoon ground black pepper
    1/2 teaspoon paprika
    seasons 2lb ground beef

    queso blanco recipe

    Yield: 1 1/4 cups

    1 c Asadero cheese; shredded *
    4 oz Jalapenos, chopped;
    -drained, OR
    4 oz Poblanos, deveined
    -julienned
    1/4 c Half half
    2 T Onion; finely chopped
    2 ts Cumin, ground
    1/2 ts Salt

    Heat all ingredients over low heat, stirring constantly,
    until the cheese is melted. Serve warm with tostaditas.

    I use taco and burrito seasoning and get the same effect. I think authentic uses chili pwder and fresh gr. chilis?? not totally sure butman I love mexican food too!!

    Onions, garlic, salt, pepper and tons of chili powder. Brown the meat in a pan and drain of the excess fat, add the rest of the ingredients and cook until the onions are tender.

    Most of the ingredients they use are artificial. You can get great tasting ground beef by adding pepper, powdered cummin and garlic powder. One secret of mine is to add salt at the end of cooking, in order to keep the beef from drying. Also add a bit of milk and let it evaporate. Seriously!

    authentic mexican restaurants do not use ground beef, they use shredded, cubed or whatever from the piece of meat, but not ground. spices often used in mexican cooking are various chiles for red green sauces — hot or mild –cumin, salt, garlic, chocolate for moles…

    They use ground cumin, ground chili powder, salt and pepper, onion powder, and garlic powder.

    They also use a lot of cilantro to season their foods.

    Mexican is the best food in the world!

    When I season beef or chicken for tacos or whatever I use about a TB each of the cumin, and chili powder, and less than a tsp each for the onion and garlic powders.

    the only meat sauce I have found to be mild enough for ME has been Jimboy’s and that meat is ground very fine ?? if it was shredded or cubed that is the secret ,,but I don’t think so.

    You are not going to believe this, but I have asked at a couple of Mexican restaurants where the ground beef was really good. The secret is to boil the meat for 1/2 hour in water (just enough to cover the meat) and then add a little mashed potato to it, as well as salt, pepper and chili powder–then you boil it all for another 1/2 hour until the liquid has reduced. Yummy!
