I would start with making cookies from scratch. they are really fun and easy. Also try looking at this websight its got over 100 quick easy and healthy recipies.

CHICKEN FAJITAS
4 boneless skinless chicken breasts
1/4 stick butter
1 cap full Mrs. Dash (regular or chipotle)
1 large onion
1 green pepper
1/4 brown sugar
lettuce, tomato, sour cream, guacamole, cheese, tortillas
Slice chicken into long strips, place in pan with half of the butter and Mrs. Dash. Cook until done and lightly browned. Stir in a small amount of water or chicken broth and the brown sugar. Cook until caramelized.
Chop the pepper and onions into strips and rings, sauté in a separate skillet with the remaining butter. Cook until onions are caramelized and peppers have crispy edges.
These fajitas are really easy to make and a little different because they’re sweet and spicy.

TERIYAKI CHICKEN
3/4 to 1/2 lb. boneless chicken breasts, cut into strips
2 to 3 tbsp. vegetable oil
2-3 tbsp. teriyaki sauce
Onion slices
Bell pepper slices
Celery slices
Marinate chicken in teriyaki sauce for 5 minutes. Heat oil in wok or skillet. Cook chicken in oil until done. Remove. Add 1/2 cup water and cook vegetables quickly until crisp tender. Add chicken and heat thoroughly. Serve over rice, if desired.

Secret Kiss Cupcakes
3 1/3 cups all-purpose flour
2 cups sugar
1 cup baking cocoa
2 teaspoons baking soda
1 teaspoon salt
2 cups buttermilk 1 cup butter, melted
2 eggs, lightly beaten
2 teaspoons vanilla extract
30 milk chocolate candy kisses,
unwrapped
1 (16 ounce) container fudge
frosting
DIRECTIONS:
1. In a bowl, combine the flour, sugar, cocoa, baking soda and salt;
mix well. Combine the buttermilk, butter, eggs and vanilla. Add to
the dry ingredients; mix well.
2. Fill paper-lined muffin cups two-thirds full. Press a chocolate
kiss into the center of each cupcake until batter completely covers
candy.
3. Bake at 375 degrees F. for 20-25 minutes or until a toothpick
inserted into the cakes comes out clean. Cool for 10 minutes before
removing from pans to wire racks to cool completely. Frost cupcakes.
Caramel Apple Salad
1 – 20 ounce can of crushed pineapple
3/4 cup sugar
3 tablespoons flour
2 tablespoons vinegar
1 large container of Cool Whip (or other similar topping)
1 24 ounce jar of dry roasted peanuts
6 to 8 apples (depending upon the size of the apples)
Put the crushed pineapple, sugar, flour and vinegar into a medium
saucepan and cook over medium heat until thick. When cooled to room
temperature, place in the refrigerator for several hours or overnight.
Cut the apples into small pieces. Add the pineapple mixture. Stir in
Cool Whip (or other topping) and all but 1 cup of the peanuts. Mix
thoroughly. Sprinkle the remaining peanuts on top.
